Hoppin' stew

Here's a recipe from a friend that I made this weekend. Very cheap and easy, and I think it could fit with candida diet!

Ingredients:
1 very large onion, chopped
5 cloves garlic, minced
olive oil
big bunch of collard greens, sliced up
2 cups dried black eyed peas
1 large red bell pepper, chopped
2 tbsp apple cider vinegar
salt/pepper

Start your beans in a large pot. The ratio is 3:1 usually, so you'll need 6 cups water or so. Saute the chopped onion and garlic in a generous amount of olive oil. After the onion turns golden, add the collards and a little water if necessary. When the beans are about done cooking (~ 30 minutes) add collard greens mixture to pot along with the red bell pepper and vinegar. Let this simmer for as long as you want (tastes better the next day!) and then serve with salt and pepper. You can have this as a side dish or a main dish on top of rice, etc.

I called it hoppin' stew in honor of the recipe's inspiration, hoppin' john, but is vegetarian with your side of collards mixed in. I suppose you could throw in some bacon if you really have to.... :halo:
