Date seed bar

A friend asked me about matrices for holding seeds together in a bar that could be used as a snack. This is the first version, attempting to replicate a commercial bar.

Ingredients:
180g dried dates
90g (1/2C) pumpkin seeds
90g (1/2C) sunflower seeds
1/4C (125ml) boiling water

Method:
Soak the seeds overnight, blot dry, and grind smaller.
Grind the dried dates to a smaller size.

Pour boiling water into a saucepan and over a low heat, add the ground dates and mix with the water using a metal spoon, then add the ground seeds and stir together with the dates until all are thoroughly combined.

Spoon date seed bar mix into a lined container and press down flat with the back of the spoon. Place the filled container in a fridge to cool the date seed mixture. After about an hour remove, lift out the date seed mix and cut into 12 bars (approx 35g each).

It works quite well, although not as dry as a commercial bar – it may need some dehydrating to get to that level of dryness.

The friend enjoyed eating it as it is. :)
 
Sounds delicious - I love anything with dates or coconut or chocolate, not that I cook much these days. Thanks for sharing :)
