Making some pies for tomorrow's dinner and wanted to share the recipe with you guys, it's very simple and yummy, maybe a good choice for New Year's Eve dessert.
INGREDIENTS FOR THE CRUST:
2 whole eggs
1/2 cup of coconut oil or butter as you prefer
Pinch of sea salt
Pinch of stevia or xylitol as you wish (this will depend on how sweet you like it)
2 cups of almond meal
DIRECTIONS FOR THE CRUST:
Preheat oven for 20 mins, at 250° celsius
Place the crust pushing with your fingers into the pie pan, its supposed to be a thin crust
Place the crust for ten minutes into the oven then bring it out when golden it's about ten minutes
**pinch the crust with a fork so it doesn't rise
INGREDIENTS FOR THE FILLING:
4 eggs
1 cup butter
1 cup mixed berries (we used blueberries and raspberries) you can also put lemon juice instead of the berries, if you do so, it's about half a cup of lemon juice
Mix well in the blender
DIRECTIONS FOR THE FILLING:
Once the mix is done, empty it out on the crust, then again put in the oven for 30-40 mins.
** You can also add some complete pieces of berries to the mix.
Then place it in the fridge before serving, and voilá! It's a very simple pie dessert :) im sure it can be made with any type of filling.
