Recently, I was looking for recipes that use cast iron woks and cauldrons for cooking outside. And came across youTube channel of "Russian Siberia". He is an Uzbek guy who speaks perfect Russian. Last night, I gave his "traditional pilaf" a try. Since I was using a cast iron dutch oven that I put inside an outdoor oven and not "mangal" sitting above the open flame, many things could have gone wrong. I did not have Uzbek spices and substituted them with Indian spices... The meat came out perfectly - soft and juicy, but the rice was totally under-cooked. I have to boil it today to be able to it it.
