Easy Salmon Pasta

Ingredients:

Gluten Free Pasta
Tin of Salmon
Carrots
Onions
Celery


Peel and chop the vegies however you like and cook in a frying pan until they soften a little bit. I fried mine in 4 parts grapeseed oil and 1 part extra virgin olive oil. Add as much salt and pepper as you like.

Start to cook the pasta. I used fusilli made from maize flour and rice flour. The texture is different to wheat flour, so you need to make it a couple of times to find the way you like it.

Open your tin of salmon, take out anything that you don't want in there (like bones) and break it up into little chunks.

When the pasta is cooked, drain off the water and return to the pan. Now add the salmon and stir it through. Next add the vegitables and stir those through too.

Et voila, easy salmon pasta. This is a good substitute for a tuna pasta bake I used to make. It started as an experiment and turned out beautifully.
