Curry sauce for "German Currywurst"

Currywurst is probably THE most famous German fast food dish. Enclosed you will find my recipe for the curry sauce that my husband and I also sell in our food trailer. Since we have been living in Switzerland for almost 9 years and have missed our Currywurst so much, we decided 3 years ago to sell some ourselves.

The sauce is a bit complex, but believe me, it's worth it! If someone wants to do without sugar completely, no problem. You can replace the brown cane sugar with xylitol. I've tested it and it doesn't make a significant difference in taste.

The sausage itself should be a smoked pork sausage. You can sauté these in pork fat and then cut into slices. Then pour the sauce over it and sprinkle curry powder on top. Those who like to eat spicy can simply use a spicy curry mixture.

The finished sauce can be kept in a sealed jar in the refrigerator for about 4 weeks. Alternatively, you can use it as a sauce for pasta.
